Sponge Cake
We bake a high density sponge cake which is ideal for Wedding cakes. It is light and delicious to eat but firm enough to be carved. All sponge cakes can be filled with homemade preserve and butter cream if required.
Sponge cake flavour variations are: lemon, orange, Irish Cream, Mocha, Vanilla, Almond and Chocolate fudge.
The finest vine fruits are soaked in brandy for a minimum of two days. We do not add nuts in this recipe unless otherwise stated.
All our fruit cakes are left to mature for approximately three months before covering.
Dashes of brandy are added to the cake alternately during this period.
